Strawberry Almond Muffins

Can I just say, that local, organic, pick-ur-own farms should be at the top of your list of places to support?!  I enjoyed myself profusely last night putting together the salsa verde, storing what strawberries we didn’t eat into the fridge to await their time of devouring, and making some muffins with this ruby ingredient!

Ode to garlic mouth all night long, and yes, I did brush my teeth before bedtime:

But I think it was worth it!

Strawberry Almond Muffins

2 3/4 C Flour

3/4 C Sugar

1 Tbs.  Baking Powder

1 tsp. salt

1 1/2 C Milk

3 Tbs.  Melted butter

1 tsp. almond extract

1 1/4 C Fresh strawberries diced

~Pre-heat oven to 350

~Grease or line muffin tins

~Combine all ingredients and bake for 35 minutes.

    I love it! When we got home from berry picking yesterday, I immediately took some pictures of our beautiful strawberries, thinking, I wish I had a blog so I could post these pictures and rave about the fabulousness of our pick-your-own-organic-berries experience! I’m so glad you blogged about it! And we’re going to make your muffins tomorrow morning! Oh, and my favorite muffin… probably Morning Glory, full of all sorts of chunks of fruit, shredded carrots, raisins… yum.
